Ingredients
8oz Medium shrimp
1/2 cup jasmine rice
2 tsp avocado oil
1/4 cup Mexican blend cheese
1/4 cup black beans (optional)
small onion sliced
small red bell pepper sliced
Directions:
1 Start by cooking the rice according to the package instructions. Set it aside once cooked.
2 In a large bowl, place the shrimp and add the desired amount of chili lime seasoning. Toss the shrimp until they are evenly coated.
3 Heat a skillet over medium-high heat and add a bit of oil. Once the oil is hot, add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
4 In the same skillet, add a little more oil if needed, then add the sliced red peppers and onions. Sauté them until they become slightly tender and caramelized.
5 Once the rice, shrimp, red peppers, and onions are ready, you can start assembling the bowl. Begin by placing a bed of cooked rice at the bottom of each bowl.
6 Next, add the sautéed red peppers and onions on top of the rice.
7 Place the cooked shrimp on one side of the bowl, and on the other side, add some sliced cilantro.
8 Sprinkle Mexican blend cheese over the shrimp and vegetables.
9 Top the bowl with pico de gallo, spreading it over the ingredients.
10 If desired, add a quarter cup of black beans to the bowl.
11 Finally, garnish the bowl with some additional cilantro leaves for added freshness and flavor.
