Buffalo Chicken Bites

Ingredients per serving:

  • 7 oz of diced chicken breast
  • Dry ranch seasoning
  • 1/3 cup of Bob’s Red Mill gluten-free flour
  • Frank’s RedHot sauce
  • 1 tablespoon of avocado oil
  1. Preparing the Chicken:
    • Start by cutting the chicken breast into bite-sized cubes.
    • Place the diced chicken in a bowl and sprinkle dry ranch seasoning over it. Toss the chicken until it’s evenly coated with the seasoning.
  2. Coating the Chicken:
    • Take a separate bowl and pour the Bob’s Red Mill gluten-free flour into it.
    • Lightly toss the seasoned chicken cubes in the flour until they are lightly coated. Shake off any excess flour.
  3. Heating the Skillet:
    • Heat a skillet over medium-high heat.
    • Add 1 tablespoon of avocado oil to the skillet and allow it to heat up.
  4. Cooking the Chicken:
    • Carefully place the flour-coated chicken cubes into the hot skillet, making sure they are evenly spaced.
    • Let the chicken cook for about 3-4 minutes on each side or until they are golden brown and cooked through.
  5. Coating with Buffalo Sauce:
    • Once the chicken is cooked, remove it from the heat.
    • In a separate bowl, pour Frank’s RedHot sauce (adjust the amount to your preferred level of spiciness).
    • Place the cooked chicken cubes into the bowl with the hot sauce.
    • Toss the chicken gently in the sauce until each piece is evenly coated.
  6. Serving:
    • Transfer the skillet Buffalo chicken bites to a serving dish.
    • You can serve them with your favorite dipping sauces like ranch dressing ( I use bolt house ranch dress) or blue cheese dressing.
