Ingredients per serving:
- 7 oz of diced chicken breast
- Dry ranch seasoning
- 1/3 cup of Bob’s Red Mill gluten-free flour
- Frank’s RedHot sauce
- 1 tablespoon of avocado oil
- Preparing the Chicken:
- Start by cutting the chicken breast into bite-sized cubes.
- Place the diced chicken in a bowl and sprinkle dry ranch seasoning over it. Toss the chicken until it’s evenly coated with the seasoning.
- Coating the Chicken:
- Take a separate bowl and pour the Bob’s Red Mill gluten-free flour into it.
- Lightly toss the seasoned chicken cubes in the flour until they are lightly coated. Shake off any excess flour.
- Heating the Skillet:
- Heat a skillet over medium-high heat.
- Add 1 tablespoon of avocado oil to the skillet and allow it to heat up.
- Cooking the Chicken:
- Carefully place the flour-coated chicken cubes into the hot skillet, making sure they are evenly spaced.
- Let the chicken cook for about 3-4 minutes on each side or until they are golden brown and cooked through.
- Coating with Buffalo Sauce:
- Once the chicken is cooked, remove it from the heat.
- In a separate bowl, pour Frank’s RedHot sauce (adjust the amount to your preferred level of spiciness).
- Place the cooked chicken cubes into the bowl with the hot sauce.
- Toss the chicken gently in the sauce until each piece is evenly coated.
- Serving:
- Transfer the skillet Buffalo chicken bites to a serving dish.
- You can serve them with your favorite dipping sauces like ranch dressing ( I use bolt house ranch dress) or blue cheese dressing.
