Ingredients: Prep for 1 serving
- 2 oz (dry) Barilla angel hair protein pasta
- 6 oz of 93% lean ground turkey
- Salt, pepper, and a pinch of fennel seed (to season the turkey)
- 1 tsp of avocado oil
Vodka Sauce (large batch for 1-2lb of pasta)
- 1 large skillet
- 1 large shallot, finely chopped
- 1 tbsp of garlic paste
- 1 28oz can of crushed tomatoes
- 1 cup of vodka
- 1/4 cup of grated Romano cheese
- 1/4 cup of plain Greek yogurt
- Handful of fresh basil, chopped
- Salt and pepper to taste
Directions:
- Cook the Angel Hair Protein Pasta:
- Bring a large pot of salted water to a boil and cook the angel hair protein pasta according to the package instructions until al dente.
- Once cooked, drain the pasta and set it aside.
- Prepare the Seasoned Turkey:
- In a skillet over medium heat, add 1 tsp of avocado oil.
- Season the ground turkey with salt, pepper, and a pinch of fennel seed.
- Cook the seasoned turkey in the skillet until browned and cooked through.
- Remove the skillet from heat and set the seasoned turkey aside.
- Prepare the Vodka Sauce:
- In the same skillet, heat 1 tbsp of avocado oil over medium heat.
- Add the chopped shallot and cook until translucent.
- Stir in the garlic paste and cook for an additional minute.
- Pour in the vodka, allow vodka to cook down for 1-2 minutes on medium heat. Then add the crushed tomatoes and stir to combine.
- Bring the sauce to a simmer and let it cook for about 10-15 minutes, allowing the flavors to meld together.
- Stir in the grated Romano cheese and Greek yogurt until well incorporated.
- Add salt and pepper to taste.
- Finally, mix in the fresh basil, reserving some for garnish.
- Serve:
- Place a serving of the cooked angel hair protein pasta on a plate or in a bowl.
- Top the pasta with a generous amount of the vodka sauce.
- Add a portion of the seasoned turkey on top of the sauce.
- Garnish with some fresh basil.
- Enjoy your Angel Hair protein pasta with vodka sauce!
Note: This recipe yields a batch of vodka sauce, but for the serving size with the angel hair pasta, use approximately half a cup of the sauce per serving. Adjust the quantities as desired to suit your taste preferences.
